ViñAlegre wines, being red wines, are allowed to progress thru secondary – malolactic – fermentation (MLF), which converts malic acid, primarily tart, to the softer lactic acid. MLF can improve wine flavor and complexity and soften the overall mouthfeel. MLF normally requires 1 to 3 months but can extend longer. At ViñAlegre, we induce MLF after primary fermentation to ensure the process progresses successfully. By this time of the year, all of the 2011 harvest should have gone through MLF and be racked (pumped) into different barrels for aging.
